Ikan Tenggiri Masak Lemak (Spanish Mackerel Cooked in Coconut Milk)

My boys love this dish. My masak lemak is a mild version.

Ingredients:
(Blend)
5 shallots and garlic,u can put more if u like
4 red chilies
2 green chilies
2 bird eye chilies
1 piece turmeric, you can use turmeric powder (1/2 tsp)
1 stalk lemon grass

Blend all the ingredients.

5 pieces of ikan tenggiri (spanish mackerels)
2 cups of thick coconut milk
1 cup of water
2 tsp of tamarind juice
turmeric leaf,thinly sliced
salt, sugar to taste

1. Saute the blended ingredients.
2. Add some water and let it simmer for a while.
3. Then, add coconut milk. Cover.
4. Let it boil for a while and add the fish.
5. Add salt and sugar. Cover.
6. Lastly, add turmeric leaf and serve with hot rice.

Besides using the fish, you can almost 'masak lemak' quite every thing. You can try chicken, pumpkin, salted fish, tapioca leaves, shoots and some even use cabbages as well as bean sprouts too.
Try the recipe, it's so easy to make especially for a busy person like me..:)

Fried Homemade Chicken Tofu

Hey, sorry for not updating..I've been very lazy and busy lately. Anyway, last Saturday I made this delicious and crispy Chicken Tofu.

Ingredients:
300 g (1 block) of soft tofu (the one that cost RM1.20 per piece,well,here in Kch)- mashed
100g minced chicken, blended
100g prawns, shelled and blend
2 eggs
2 tbsp corn flour
1/2 carrot, chopped
3 dried mushroom, soaked in warm water and sliced thinly
salt, pepper

For frying:
oil
corn flour

1. Mix all the ingredients.
2. Steam for 20 minutes.
3. Let cool before you cut them into large pieces..it's up to you actually. (make sure the tofu is cold enough,if not it will break)
4. Coat the sliced tofu with corn flour and fry.
5. Don't forget to make the delicious dip - mayo + sweetened milk.

It's easy, right? and yes...delicious too!!
